When I was growing up on Long Island, we had a yucca plant in our side yard. It threw up a huge stalk with white blossoms on it once a year. It wasn’t until decades later that I ate yucca. Had we known the roots were so good to eat, we might have grown more. :-)

We have planted quite a lot of yuccas in our yard over the years. I knew they were edible, but we’ve never tried them.
